Other recipes

Those last recipes fall under the "good for you, taste good, but not so quick" category. Here are a couple that are super quick, good for you, and taste good.

Mango-licious Tilapia
4 tilapia fillets
salt and pepper

1 mango - peeled, seeded, and diced
1 small red onion, finely chopped
1 avocado, peeled, pitted and diced
2 roma tomatoes - diced
1 lime, juiced
1 jalepeno, seeded and finely chopped (can use 1/2 a jalepeno for mild salsa)
1 tablespoon minced fresh ginger
1/4 cup cilantro
1 teaspoon salt

Salt and pepper tilapia fillets. Broil about 5-7 minutes or until they flake with a fork. While the fish cooks, combine all the salsa ingredients in a bowl. Stir to blend and set aside. Spoon salsa over fish to serve.


Roasted Asparagus
I use my toaster oven for this one. It's faster than heating up my big oven and it doesn't heat up my whole kitchen.
1 bunch asparagus
olive oil
salt

Heat oven to 450°. Wash and break off ends of asparagus. Place on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt. Toss a little with your hands to coat. Bake for 10-12 minutes. Serve.
