My one redeeming meal yesterday - I had Dal for dinner. (The kids had mac-n-cheese.) Dal is a lentil/curry dish. It is one of my favorite dishes, so easy to make, so yummy, and very filling. I thought I'd share the recipe...
Dal
2 lbs. split yellow peas or red lentils (The lentils turn mushy and the peas stay together more and have more of a bite. It just depends on which texture you prefer. I like both.)
1 carrot, diced
2 stalks celery, diced
1 med. onion, diced
2 tablespoons butter
1 tablespoon curry powder
1 tablespoon lemon juice
1 bay leaf
1/2 teaspoon salt
3 chicken bouillon cubes
1 1/2 quarts water (depending on the age of the lentils and how soupy or thick you like it, you may use more or less.)
Throw everything in a crock pot and cook on low for 7-9 hours.
This is usually eaten along with basmati rice, but can be eaten plain. I like it with chopped tomatoes, a squeeze of lemon, and a dollop of plain yogurt on top. Oh, and a little cilantro never hurt. :)

ReplyDeleteYou know, I was just thinking about this recipe. I have a bunch of lentils that need to be used up. The kids would never touch this stuff, but I can make it for me and Nate. I love that it's a crockpot recipe, too.
